Reducing the size of the kitchen and redesigning the dining room were at the core of this project. Additionally, increasing the number of seats to 750 required the integration of a 200 m² annex onto the principal building. Each space was reconsidered with an emphasis on practicality while limiting the displacement of users and personnel as well as the circulation of food. The depth of the space and its lack of natural light were corrected by adding abacuses and unusual light walls that would become the project’s signature. The site, once anonymous, now possesses all the characteristics associated with comfort and conviviality, and with dynamism as an added bonus!
